Where a product is described as organic, look for the NPOP or India Organic mark and the certifying body's name on the pack — that is the only claim worth relying on, and it covers how the crop was grown rather than how the food tastes.
On oils, the distinction between cold-pressed, wood-pressed (kachi ghani) and refined is about heat. Wood-pressed and cold-pressed oils keep more of the parent seed's aroma and micronutrients but have a shorter shelf life and a lower smoke point, so store them away from light and buy in sizes you will finish in two to three months. Refined oils last longer and suit high-heat frying.
For grains, ancient and millet varieties — rajgira, ragi, red rice poha, jowar — carry more fat in the bran than polished white rice, which means they turn rancid faster. Check the milling or packing date, not just the expiry, and refrigerate millet flours after opening. Salt, sweeteners and spices should list a single ingredient and an FSSAI licence number.
