What does bean-to-bar mean?
The maker controls everything from raw cocoa bean to finished bar rather than melting and remoulding industrial couverture. It usually means a stated cocoa origin and non-alkalised cocoa, which retains more of the bean's natural flavour and flavanols.
How should dark chocolate be stored in Indian weather?
At 16–20°C, sealed and away from strong smells, since cocoa butter absorbs odour readily. Refrigerate only in peak summer, in an airtight box, and let the bar come back to room temperature before opening so condensation does not form on it.
