Kolam white rice from Nagpur, sold in 1 kg packs. Also called bullet rice for its short, rounded grain, kolam is the everyday table rice of much of Maharashtra — soft, faintly aromatic and non-sticky when cooked. It suits daily dal-rice, and grinds well for dosa and idli batter.

FAQs
How much water should I use?
Around two cups of water per cup of rice in an open pot, a little less in a pressure cooker. Adjust once you have cooked it a couple of times.
Is kolam the same as basmati?
No. Basmati has a long, slender grain and a strong aroma. Kolam is short and rounded, milder, and better suited to daily meals and batters.
Is it good for dosa and idli?
Yes, kolam is commonly used for batter and ferments well with urad dal.
Does it need soaking?
Not essential, but fifteen to twenty minutes of soaking gives a softer, more evenly cooked grain.
