Yes, in cooked dishes, but use much less — about a quarter of the fresh quantity. In dishes where you want the juice and bite of fresh adrak, keep the fresh root.
Is this the same as the black ginger powder?
No. This is ordinary dry ginger, Zingiber officinale. Black ginger is a different plant with a darker, more peppery character.
