Sattu: Origin, Uses and How to Eat It

Sattu is a flour made from roasted gram (chana), and it comes from Bihar and the neighbouring parts of eastern Uttar Pradesh and Jharkhand. It has been eaten there for generations as a simple, filling food.

This guide covers where sattu comes from, what it is, and how to use it at home.

What is the origin of sattu?

Sattu comes from the Indian subcontinent, and its home territory is the Bihar belt. Roasted grain flours were an easy, portable, long-keeping food, which is why sattu became part of everyday eating there. It is mixed with water, salt or jaggery, or stuffed into litti. We cannot give you an exact date or a single place of invention, because no reliable record of that exists, and anyone claiming one is guessing.

What can be said safely is that sattu is not a new fashion food. It is a regional pantry item that has now spread across India.

What is sattu made from?

Sattu is made from roasted grain or pulse that is ground into flour. The best-known version uses roasted chana (Bengal gram). Some households also make versions with roasted barley or a mix of grains. When you buy a pack, read the label so you know which one you are getting. Chana sattu has a nutty, toasted smell, and it is a very fine, pale-brown powder.

What does stone-ground sattu mean?

Stone-ground means the roasted grain is ground between stones rather than in a high-speed steel mill. Stone grinding is a slower, older method, and many people choose it for the texture and aroma. It is a choice about process, not a guarantee of better nutrition, so treat it as a preference. If you want to try it, there is Chana Sattu Atta (Stone Ground) from Soil Origin, sold as a pack of 2.

How do you eat sattu?

There are three common ways, from the simplest to the most traditional:

  1. Sattu drink. Stir two to three tablespoons of sattu into a glass of cold water. Add salt, roasted cumin and lemon for a savoury version, or jaggery for a sweet one. This is the classic summer drink in Bihar.
  2. Stuffing. Mix sattu with chopped onion, green chilli, ajwain, mustard oil, salt and lemon. Use it to fill dough balls for litti, parathas or even chapatis.
  3. Ladoo or porridge. Mix it with ghee and jaggery for ladoos, or cook it with milk or water for a simple porridge.

Whichever way you use it, add sattu to liquid gradually and stir well. It clumps fast.

Is there a ready-to-mix sattu drink?

Yes. If you do not want to measure and mix every time, Zen Ya Food and Beverages makes ready sachet-style drinks, 10 servings of 24 g each: Sattu Lemon Drink and Sattu Chilli Drink. They are handy for the office or travel. Read the ingredients on the pack to check what else is in the mix.

How do you choose good sattu?

Look at the ingredient line first. It should name the grain, and ideally nothing else. Check the pack date and use it within the period on the pack. Open the pack: it should smell toasted and nutty, not stale or musty. Store it in an airtight jar away from damp and heat, and use a dry spoon every time.

Is sattu good for you?

Sattu is a roasted pulse flour, so it is a source of plant protein and fibre, and it is filling. That is as far as we will go: it is a food, not a medicine, and no single food does everything. If you have a medical condition, are pregnant, or are managing blood sugar, ask your doctor or dietitian how much suits you.

Frequently asked questions

Where did sattu originate?

Sattu is traditionally associated with Bihar and nearby parts of eastern India. No exact date or place of origin is recorded.

Is sattu the same as besan?

No. Besan is ground from raw chana dal, while sattu is made from roasted chana, which gives it a different smell and taste. They are not interchangeable in recipes.

Can I drink sattu every day?

Many families do in summer. Start with a small quantity and see how your stomach responds, because the fibre can feel heavy at first.

Where can I buy sattu online in India?

EarthBased stocks Chana Sattu Atta from Soil Origin and ready-to-mix sattu drinks, with pan-India delivery in 3–5 days.
