White Tea Silver Needles

Silver Needles, or Baihao Yinzhen, is a white tea made only from the unopened buds of the Camellia sinensis plant. The buds are hand-plucked at dawn during a short spring window and simply dried in sunlight, with no rolling and no oxidation step. The cup is pale gold, delicately sweet and very low in caffeine, which makes it a tea to sip slowly rather than to gulp.

How to Brew

• Heat water to 70-75°C; never use boiling water

Why is boiling water a problem?

Boiling water scalds the delicate buds and strips out the natural sweetness, leaving a flat, slightly bitter cup.

How much caffeine does it have?

Roughly 10 to 20mg per cup, well below green or black tea, which is why many people drink it later in the day.

Can I re-use the buds?

Yes. A second and often a third short steep will still give a pleasant, lighter cup.
