Peony White Tea by Lluvia Tea

Peony White Tea, or Bai Mudan, is made from young leaves and unopened buds of Camellia sinensis that are simply withered and dried rather than rolled, fired or oxidised. Because it uses both buds and first leaves, it has more body and flavour than a bud-only white tea while staying delicate. The cup is pale gold, soft and faintly sweet, with a light caffeine level.

How to Brew

• Heat water to about 75 C. Boiling water makes white tea bitter.

It is light rather than weak. If you want more depth, increase the leaf slightly instead of the water temperature.

Can I drink it in the evening?

It is lower in caffeine than green or black tea, though not caffeine-free.
