Unlike CTC Assam, Orthodox processing preserves the leaf cell walls intact — meaning theaflavins and thearubigins (the cardiovascular antioxidants in black tea) are released slowly and completely during steeping rather than being broken down in processing. Theaflavins reduce LDL cholesterol, improve arterial elasticity, and reduce cardiovascular risk with daily consumption.
