How to Brew

Use roughly one teaspoon of leaf per cup. Pour water at about 80°C, not boiling, and steep for two to three minutes. Boiling water scorches green leaf and turns the cup bitter. The same leaves take a second infusion. For iced tea, brew stronger and pour over ice.
