Cocoa Powder vs Cacao: What's the Difference & Which is Healthier?

Walk into any health food store in India and you'll find both cocoa powder and cacao powder on the shelves — often at very different price points. Many people assume they're the same thing with different spellings. They're not. The difference between cocoa and cacao is significant — for your health, for your cooking, and for your wallet.

Where Does Cocoa Come From?

Both cocoa and cacao come from the same source: the Theobroma cacao tree, native to Central and South America. The cacao tree produces large pods containing 20–40 seeds — the cacao beans. Everything starts from these raw beans. What happens next determines whether you end up with raw cacao or processed cocoa.

Raw Cacao vs Cocoa Powder: The Key Difference

Raw Cacao Powder

Raw cacao powder is made by cold-pressing raw cacao beans — removing the fat (cacao butter) without using heat. The resulting powder retains the full spectrum of naturally occurring nutrients, enzymes, antioxidants and flavanols. It is the least processed form of chocolate.

Cocoa Powder

Cocoa powder is made by roasting cacao beans at high temperatures (120°C–150°C) and then pressing out the fat. The roasting process develops the familiar chocolate flavour but destroys a significant proportion of the heat-sensitive enzymes and antioxidant compounds. Cocoa is further divided into:

The European Food Safety Authority (EFSA) has approved a health claim for cocoa flavanols and heart health.

Cocoa contains phenylethylamine (PEA) — the same compound the brain produces when you fall in love — which triggers the release of endorphins and dopamine. It also contains tryptophan (precursor to serotonin) and theobromine (a gentle, long-lasting stimulant). This combination explains why chocolate genuinely makes people feel good — it is neurochemically active.

5. Outstanding Iron Source

At 13mg of iron per 100g, cocoa and cacao powder are among the richest plant sources of iron — critical for vegans and vegetarians. 6. Blood Sugar Regulation

Despite being derived from a sweet treat, unsweetened cocoa powder has a very low glycaemic index and may actually improve insulin sensitivity.
