How to Brew

Use a heaped teaspoon of flowers per cup in water just off the boil and steep three to four minutes. Since there is no leaf, over-steeping will not make it bitter, only stronger. Gongfu-style brewing in a gaiwan, with short repeated steeps, draws the aroma out in stages and is worth trying if you have the equipment.
